I recently have been put back in the deli at my store after a stint as the dairy back-up.  This hasn't been a problem since I get along really well with most of the people there.  Since I came back one girl who started a couple of months before I went to the dairy, tries to tell me how to do my job likes shes a boss or something.

 

Anyway this girl who worked 11 years in a deli at a store in Ohio (I'm in southern WV) acts like she knows everything but doesn't know how to make the simplest things.  When our dept. head asked her is she knew how to do something she replied, "all our stuf in Ohio was pre-made.  We didn't make anything in the store."

 

My question is this:  Has anyone ever heard of a deli where everything is pre-made?  My department head said she's been around for over 35 years and had never heard of this.  Just wondering is this girl right or just full os **** as usual.

I am in columbus Ohio and the only thing pre maid is doughnuts and pies. Every thing else the deli people make by hand

Guacamole, Cheese balls, Wraps, Sandwiches, Basil Mozzarella Balls, 7 Layer Bean Dip. Sourdough Breadbowl, etc all MADE IN STORE!

She doesn't know how to make turkey rolls we have on the holidays, and sandwiches.  Always has to look at the pictures in the book.

I work in Ohio.  Most of our sandwiches and stuff come in pre-made.  We "make" guacamole, if you count squeezing a bag of avocado and then squeezing a bag of salsa on top of it and mixing it together.  We used to be able to make our own salads for the salad bar but there were "complaints from customers" that we didn't have an ingredient list for what went into the salads. So now everything comes in bags and we just mix it together, if even that. A lot of stuff just comes in buckets and we dump it into the trays. We're not even allowed to have real salad on our salad bar anymore. WTF? We don't have lettuce or dressing or anything, just a bunch of pasta salads. One time a few people complained about the lack of salad on our salad bar and they solved it by getting in "salad wedge kits" for a while - lettuce wedges that we put dressing and stuff on, but people weren't able to choose their own dressing or toppings.  Needless to say they didn't sell well and we're back to a lettuceless salad bar. 

Maybe she came from our store.

I'm from Ohio!  YAY  biggrin

  i wonder if she is from a real small 'country store' vs a city store.  The deli can sort of pick and choose the things they want to sell from the order sheets.  So maybe at the store she came from they kept it real simple and got all the crap that comes in the 5 lb tubs and just dumped them into the dish to sell out of the case.  Some delis have real small 'real estate' on the sales floor so they can just get pre pack stuff to sell and not have to make much.  For example - salad kits are caeser, chef, asian and spinach but if they don't sell then you might eliminate them from your floor.   the cold chicken wall might be real small so you only toss out some 8 pc and roto birds plus some breaded wings and popcorn chicken.  why make deli weekender trays if you dont have huge volumn?  she might come from a store where all they did was make a couple cheese trays, vegi trays and an occasional croissant tray.  so yea - i guess some store can say thay all the crap they sell is pre made

I remember when I first started working in the bakery one of the ladies in the deli would actually boil potatoes to make the sour cream potato salad.  There were other salads and dips that were made from scratch too.  Now, everything comes in already made or it comes in a kit and someone simply has to mix it together.

I am in columbus Ohio and I worked in small and larger stores with deli the make everything in store except donughts and pies. My large marketplace store has more idtems than most krogers and we still hand make everything.

 this is the way it should be.  things need to be homogeneous and consistent from one store to the next.
