I used to buy pasta salad or potato salad for lunch sometimes but ugh...they are always horrible, so I stopped buying them. They don't taste fresh. Kroger needs to start changing them out more often - there's no need to put them in huge bowls, just put them in small plates and then change as needed instead of letting all of that food sit out for four or more days.
All that stuff that's in open bowls is suppose to be rotated every morning. You get a clean bowl. You put the new stuff in the clean bowl. You then put the stuff from the previous day on top. If you don't sell enough of the product to get rid of all the previous day's product plus most of the current day's product, then you're putting out to much. The open stuff in the display case should be no more than 24 hours old.

Our deli has the same problem. You can always tell when the pasta salad is on its last legs by the browning edges on the noodles. Ugh... On the bright side since I work there, I can get the stuff when it's fresh made. I never bother with it once it's been out for a day.

It's the same reason all those pre packaged salad mix bags go bad within 2--4 days after purchase. That stuff----just like all the deli food---is handled by and sent by other contractors from foreign lands. iAnd assuming it all gets stocked properly once it reaches a grocery store. t's a time issue
