That's pretty much decided on a store to store basis. You have to take into account the sales your department does and all that for the hours budgeted, then figure that the deli is going to have a larger staff due to the fact they have to wait on more customers than bakery does.
Our bakery is kinda like that. Way fewer employees than the deli, but the department head and backup are always over there.
I know what you mean, there's always 3-4 people in deli and my whole bakery department only has 6 people including me, and one person is quitting soon and we aren't even going to have a replacement by then, so i'm not even sure how we're going to have enough people to run the department with vacations coming up and all, plus another one is pregnant and will be leaving soon because of that... we're screwed
