How does this position function? I was told there are no butchers at a lot of Kroger stores. Does the meat come in pre-sliced and packaged? It looks in the deli case but does it come in already cut or do they actually have band saws to cut the T-bone/ porterhouse?
Of course I can only speak for my store, but in my experience, not much for the shelf is cut anymore. All the stuff in the case is typically cut every morning and refilled throughout the day when needed. The bone in ribeyes are cut with the saw. Anything that doesn't have a bone (like top sirloin, strips, boneless ribeyes, fillets, etc) is cut by hand with a knife. Mostly everything else is presliced or cut. We do still cut stuff for customers when they ask. That tends to be pork loins, whole ribeyes, whole strips, whole fillets, slicing stuff for jerky, and so on. The saws aren't used a ton anymore. We don't sell t-bones or porterhouses much. I've used the saw to cut pork butts into steaks, and at Christmas you'll cut a ton of rib roasts into steaks. That's about it I think.
