I work part-time and I don't get any medical insurance/benefits through Kroger. So when I do need to take off for like a couple of weeks how do I go about doing that? It's not like they need to take anything out of my paycheck or re-assemble my whole work schedule (since I get paid by the hour) like they might with a full-time employee. Do you think they might let me off if I claim it is due to a religious observance?
And what's the minimum you can work without getting a leave of absence? Since I am also a full-time student and will be taking a lot of hard classes next sem and I intern/volunteer, I won't have a lot of time to be able to work but I want to keep this job, especially since I hope to be able to work more next year (Spring 2014). So if I could do a few hours each week or alternating week (preferably), it would be great but I need a way to stay on their list (for lack of a better word... I mean that I don't want to be unemployed because I left too big of a gap in between each shift).

You can take off a couple weeks unpaid with no problem as long as you can convince your dept head to give it to you. We have a bagger who took a family vacation and was gone like a month. We just didn't schedule him. There is a certain length of time you can be off before you risk being automatically terminated, but you should take that up with your local asp.
