when is a baker a baker?

I have been working for krogers for 9 months now. I have been the baker position for about 5-6 months. my mgr gave me the job in march and I have been the only baker as my store. I was told when I took the job that I would be getting 40 hrs and a pay raise. so far I haven't received anything but more work and my hours cut from 35-40 to 28 hrs. I finally after trying to get answers from my chain of command and getting the run around, I contacted the union and the district office to get answers. my union rep said that it would be taken care of. the next day, the store mgr started to blame me for everything that was wrong in the dept, even if others were responsible, I got in trouble. now he is asking my mgr how long does it take to proof, bake items and why cant I unload the delivery truck, do the CAP report, proof, bake, package the items I bake and set the floor in 5 hours? he said that I don't deserve 40 hours because the job can be done in less hours without me getting any help. what can I do now? im doing all this afraid that im going to get fired if I ask about my pay or anything. it just seem like hes looking for a reason to write me up and fire me for daring to ask for the pay for the position that they gave me

I've been a baker for 25 years.  If you tell me the following, I'll tell you how long it should take you to get it done.  By the way, we have two (8 hour) people at my store to do all that.

How many packages of each type of bread do you bake each day? How many channel carts of product do you usually have to bake?

How many channel carts can you get in your proofer at one time?

How many ovens do you have?

Do you have to do the donuts too?  If so, then how many?

How big is your frozen food order on a daily basis?

As far as setting the floor is concerned,  I assume you just mean the bread.  If you mean everything else, then that's not your responsibility.  That's your department manager's responsibility.  You are the bread baker.  Your job is to get the bread baked.  You are not responsible for what's wrong with the department and don't let them tell you that you are.  They can't fire you.

Sounds like you need to talk to  your union rep again and let them know of you managers behavior.  Sounds like he is out to get you.  Ask your manager why he said you would get 40 hours.  Tell him you deserve the 40 hours he promised you as well as the raise.  If you get done with your baking in less time then you can piddle around and do other things.

 Adding to the above:

This is about how long it takes  to do the following tasks at my store on a good day:

Baking the bread: 3 hours

donuts: 1 hour

bagging the bread: 5 hours

CAP and breakout: 1 1/2 hours if I rush, 2 hours if I don't.  I prefer to allow myself 2 hours and If I finish early, I'll help with baking cookies or something.

frozen food order: usually averages out to be 1 minute per piece.  For example, today I had a 90+ piece order and it took me 1 1/2 hours to break it down and put it away. 

So far that adds up to at least 12 hours of work, and your manager expects you to get it done in 5?  Unless you work in a very small store with a very small bakery, there's no freakin' way.  How much does your bakery take in each week?  My store averages $1.5 million a week and the bakery usually averages around $17 thousand to $18 thousand.

I mentioned earlier that we have two 8-hour people.  With the remaining time we have to get the croissants and pies baked.

 In my store, our main baker is a full timer who bakes 5 days a week. we have a part timer who does it the other two days a week. I bake when one of them goes on vacation. I actually like baking, i just don't like the early morning hours!

There's no way in hell for anyone to be able to do all that in 5 hours. I don't know about your store, but in mine, our proofer only holds 2 trolleys at a time. We only have 1 ovens, that hold one trolley each. This makes for a lot of trolley switching in the morning. Each trolley takes about an hour to proof as well and there's usually 3 or 4 trolleys that need proofed. Putting in 2 at a time still leaves you with about 2 hours of proofing (obviously during that time you bake the donuts/par baked breads/whatever doesn't have to proof).

On a good day, I can get the baking and packaging done in like 5/6 hours, but my store is a $600-700k a week store, we aren't anywhere near marketplace sized. This gives me time to help fill the floor with other products, but to expect you to do the truck, fill other times, and do cap as well in that time? crazy.

Ask this manager if he's ever baked bread or even worked in a large professional bakery.  "No", he says?  Then how does he know how long it should take?  If he asks why it takes so long, just say it just does.

I'm the lead baker and on a good day I can usually get everything baked, packaged and out on the sales floor in 4 1/2 to 5 hours. I then do my cap reports and slack out which takes about 1 1/2 hours.  This is in between answering the phone, waiting on customers and pulling the truck up. And if I'm really lucky, I get to be the cake decorator all at the same time. I also do donuts and usually have to clean up after the night people too.

 Yeah, OK, right.    But exactly what is  "good day"?    Assuming you are being truthful ,  you must work in a small store with a smaller selection than most stores, and light sales.  Or as a "lead baker" you have several 'assistants'??
