Our last produce manager worked 4A-12P for most of their shifts.
I usually work 6A-2P most days and I have a closing shift once a week. If I am able, I also like to work one day on the wet rack (4A-12P).
In my division, they want produce managers to work 9A-5P + one close in order to be there for customers, training associates, and getting ready for prime time.
In reality all department heads should work 8a-4p, 9a-5p or 10a-6p. I Would say if your working 10a-6pm cross the board, the 1 night would not be required.

But your post is about theoreticals (when they "should" work). May I ask about your store in particular: Exactly when does your produce manager actually start?

9a and 10a are too late because we have to write out the orders and assess the department. If I walk into a disaster at 9a or 10a, we'll be in terrible shape by the time customers start actually flowing in. 10a would work for lazy produce heads who don't inventory their cooler and prep rooms and take smoke breaks, but the rest of us would be doomed coming in at 10 am everyday.
Most everyone came in at 6am(when the store opened). Produce and Accounting would come in ~5am. Managers rolled in around 8am. Night Grocery Manager walked in at 10pm(an hour before close).
Accounting at the store I worked at was handled by the FEM and their backup so essentially our FEM came in at 5am.
