What rights (if any) does a person have if they dress up like a zombie and wear a sign that says they have the coronavirus, while shopping at a Kroger store?

 

Can they be expected to be tackled to the ground by the local cops?

If you are fortunate, yes the police will tackle you.  If not, the mob might lynch you.

You should try it and let us know how it works out for you.

If someone dies fleeing from you, you will be charged with involuntary manslaughter.

Ideally, they'd be asked to leave, and police only be involved if they didn't.

My store, though, would probably wear out their lips kissing their ass and shower them with gift cards to make up for anyone who gave them a hard time no.

I read a story about a guy who was charged for a form of terrorism because he intentionally coughed on someone, saying he had the virus. I think people are overreacting to this and make fun of it too, but don't do it, you could end up in prison.
